Roasted eggplant tossed with a sesame-honey-mint dressing makes for a surprisingly good salad, and grilled Texas quail in a treatment of porcini mushrooms and sherry is the perfect complement.
Special sips: The perfect gin Gibson is made with Bombay Sapphire and cocktail onions, and the Yellow Rose of Texas mixes 1800 Silver Tequila with Cointreau and a splash of pineapple juice with a squeeze of lime.
